Hardly, only the more popular ones that you would think of ripping are done, you should do ones where not many have. Old NES/SNES RPGs for instance have content you can rip that nobody did.
For instance, there are a ton of backgrounds and enemies you can snag from those games. Mystic Ark has plenty. I barely even scratched the surface with that game other than the characters and some core backgrounds.
Non RPG games such Castle of Illusion does not have the final boss ripped, nor the background of that battle, Gunstar Heroes does not have Duck Battalion, Pink Lobster, or Black Fly from the final stage boss gauntlet. Dynamite Headdy does not have backgrounds of the 5th world and beyond.
Choose a project that has not been done or barely anyone has, it matters little if it is a big name or not, focus more on the fact there is content yet to be ripped from games.
Hell, you can even rip characters from ROM Hacks if you want if the spritework is solid or the hack is well known. Zink Oxhyde's Roll Chan series for instance (Mega Man 1-6 main character replacement), the site has only the first 2 games and not the other 4.
