Zelda series always annoyed me for forcing characters into roles instead of the characters making these decisions on their own... Hold up the curse only explains the creation of ganon (or rather the entity that would become ganon). Ganondorf's origin is completely separate. It is very possible that his involvement with demise was just a side effect of gaining the triforce of power. He is still a character with his own complex reasoning for feeling the way he does (explained in wind waker), and probably would have attempted to rule hyrule with the curse existing or not.
